Chocolate delight

If you are feeling down and you need something to give you a boost, indulge these fabulous chocolate cupcakes. They are so scrumptious and delicious, they will instantly make you feel better. Don't worry about the calories this time. We were talking about feeling better!

What do we need:

  • 4 eggs
  • 200 grams of sugar
  • 100 grams of shortening, melted
  • 40 grams of powdered cocoa
  • 90 grams of regular flour
  • 120 grams of chocolate chips

What do we do:

  • Preheat the oven to 190°C.
  • Beat the eggs with the sugar until they have doubled in size.
  • Beat in the melted shortening.
  • Sift the cocoa and the flour and fold it into the egg mass.
  • Fold the chocolate chips into the batter.
  • Fill up 10 large muffin cups, that you have buttered and floured in advance.
  • Bake the chocolate delight for 20 min.
  • Let them cool for 10 min in the pan, before you invert them onto a wire rack.

This recipe is a keeper, really. Freeze them in ziploc bags and keep them as comfort food. Just pop them into the microwave whenever you're feeling blue and looking for a treat.
