As easy as pie

No, don't worry, I'm not going to let you make a pie. There's this recipe I would like to share that is so easy to make. You just have to try it!

So what do you need?

2 tablespoons of oil (30 ml)
1/2 teaspoon of red pepper flakes
1 small onion, finely chopped
1-2 cloves of garlic, minced
1 teaspoon of ginger
1 teaspoon of honey
a bunch of fresh coriander or parsley, chopped
about 15 cherry tomatoes
one pound of deshelled and deveined shrimp (500 gr)
a package of Chinese Mie noodles

Fill a large pan with salted water and bring it to the boil. Let the noodles soften in the water, of the stove, lid on.
Heat the oil and add the red pepper flakes, the onion, garlic and ginger. Stirfry until the onion is translucent. Add the honey, half of the coriander and the whole tomatoes. Stirfry a little longer. Turn up the heat and add the shrimp. Cook them for no longer than 5 min or when they turn opaque.
Drain the noodles and throw them in the pan with the shrimp. Mix it all together and sprinkle some fresh chopped coriander on top.

TIP: you can add mushrooms too if you like!
