What do we need:
- 4 eggs
- 200 grams of sugar
- 100 grams of shortening, melted
- 40 grams of powdered cocoa
- 90 grams of regular flour
- 120 grams of chocolate chips
What do we do:
- Preheat the oven to 190°C.
- Beat the eggs with the sugar until they have doubled in size.
- Beat in the melted shortening.
- Sift the cocoa and the flour and fold it into the egg mass.
- Fold the chocolate chips into the batter.
- Fill up 10 large muffin cups, that you have buttered and floured in advance.
- Bake the chocolate delight for 20 min.
- Let them cool for 10 min in the pan, before you invert them onto a wire rack.
This recipe is a keeper, really. Freeze them in ziploc bags and keep them as comfort food. Just pop them into the microwave whenever you're feeling blue and looking for a treat.
