what do we need:
- 1 recipe of shortcrust pastry
- 1/2 tablespoon of oil
- 1 shallot, minced
- 1 bag of fresh spinach
- 5 eggs, beaten
- 150 grams of your favorite grated cheese
- salt and pepper
- Preheat the oven to 175°C.
- Heat the oil in the pan. Add the minced shallot and let it simmer until it's become translucent.
- Add the spinach and keep stirring until the spinach has wilted. Let the spinach drain in a colander until it has released all of its fluids.
- Beat the eggs and add the cheese.
- Season with salt and pepper.
- Pre-bake the crust for 10 min.
- Divide the spinach over the crust.
- Pour the egg-cheese mixture over the spinach.
- Bake the quiche for 30 min.
- Serve warm or cold, with a salad on the side.
